Chefs McCracken and Tough Debut New Burger at The Old Sage

SEATTLE/EWORLDWIRE/June 18, 2014 --- McCracken Tough, the restaurant group recognized for elevating bar food to an art, today announced the debut of a new burger in the menu of The Old Sage, its newest restaurant. Following the success of their first two burger creations at Spur Gastropub and Tavern Law, the chefs continue their tradition of treating the kitchen as part lab and part culinary playground, this time to create Old Sage Burger.

The delicate cold smoking technique used to prepare the Old Sage Burger preserves the fat content in the all-beef Painted Hills meat and allows for better smoke absorption. Described by Chef Brian McCracken and Chef Dana Tough as being "all smoke, with no mirrors," the new burger was built with an eye for balancing flavor and structure. The burger's foundation is a perfectly textured housemaid pain au lait, a creation in collaboration with The Old Sage chef de cuisine Matthew Woolen.

"Creating a great burger has as much to do with the meat as it does with the bread," said Matthew Woolen, chef de cuisine at The Old Sage.

Chefs McCracken and Tough, who own The Old Sage, agree, adding, "The new signature milk bread Matt has created lends the Old Sage Burger the perfect structure, allowing for all the meat juices to be captured while keeping the burger structurally sound."

Carefully sourced and curated ingredients anchor the toppings that make this great-tasting burger memorable. Served with in-house cured and smoked bacon set atop gruyere cheese, the meat is accessorized with a perfectly-balanced agrodolce onion topping; a sweet-and-sour spread enriched with beef jus. Turkish chili pepper (Urfa biber) gives a slight kick to the aioli used as condiment.

Served with a side of assorted root chips, including taro, yucca, carrot and beets, the chips are seasoned with spring onion-buttermilk powder for the chefs’ modern interpretation of sour cream and onion chips. On the menu for $15, the Old Sage Burger is being introduced in conjunction with a McCracken Tough restaurant Burger Tour card.

Tour cards can be picked up at any of the three McCracken Tough restaurants - Spur Gastropub, Tavern Law and Old Sage. Upon visiting all three restaurant locations and purchasing a burger, the passport becomes a $15 gift card for use at any of the restaurants on any menu order.
